The certification allows you to market your ice cider with the "Quebec Ice Cider", a Protected Geographical Indication (PGI).
The Quebec Ice Cider certification guarantees:
All stages of the production of the product, including the harvesting of the raw materials, storage, sugar concentration, pressure, fermentation and bottling must take place exclusively within the geographical zone defined.
Ciders made exclusively from the late varieties of apples, for which the sugar is strictly through the natural cold, without adding colouring or natural or artificial aromas.
Product evaluation by an external committee to evaluate the market quality of the product and ensure that the product has the required qualities in order to use the term ‘Quebec ice cider’.
A company certified according to the PGI-Quebec Ice Cider is permitted to use the standards’ logo.
The Quebec Ice Cider certification applies to Ice cider from Quebec.
All companies who carry out production and transformation operations who hold a manufacturing permit for cider and/or a artisanal production license can be certified Quebec Ice Cider.
